There are many recipes for preparing baked ribs with American-style barbecue sauce. Although I almost always make them with the recipe of my New York friend Marco, -the BBQ New York Ribs-, I also like to alternate and make them with this other quick and easy recipe for baked ribs. Today we are going to make them with a marinade in orange and Cajun spices that gives them the special touch of southern cuisine and that you will surely like as much as the previous recipes.

We start by choosing a pork rib that has plenty of meat. We mix the Cajun spices by putting a teaspoon of each of the following ingredients in a bowl and stirring until obtaining a kind of dry marinade. We will need: hot paprika, dried onion, dried thyme, garlic powder, black pepper, cumin, dried oregano, mustard seeds and chili powder.

Sprinkle the meat with one or two tablespoons of the Cajun spice mixture. We mix the juice of an orange with 4 tablespoons of barbecue sauce and with that mixture we varnish the ribs. We scrape the orange peel and reserve it for serving when we finish roasting the ribs.

We put the ribs in the oven and cook them at 200º for about an hour, turning them every 15 minutes and taking advantage to continuously varnish them with the orange concoction and barbecue sauce. When we see that the rib bones begin to show, the ribs will be in place. We take them out of the oven, sprinkle them with the grated orange peel and bring them to the table.
