Place the pork ribs, half onion, bay leaf and black peppercorns in a pressure cooker. We cover with water and place it on the fire. When the boil starts, we remove the impurities with a slotted spoon. Cover and cook with the valve in position 2 for 10 minutes over medium heat.
After the cooking time has elapsed, remove from the heat and let the steam escape completely before opening the pot. Drain the rib and dry it very well with absorbent paper on both sides.
