Stewed ribs in curry: comforting recipe
Pork ribs with potatoes are a classic of our gastronomy that can be prepared in the oven or in a good spoon dish, with its regional variants. On this occasion I have let myself be carried away by the passion for spices that we have at home to prepare comforting stewed ribs in curry, a great dish for these cold days ahead.
The typical spice mix for curries already gives us a lot of flavor, but if we can enrich the aromas with a few seeds and a few more spices, the stew will win as a whole. The amounts can be adjusted without problems, especially if we have difficulties with the spicy.

- 1/2 teaspoon mustard seeds
- 1/2 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon ground curry

- Garlic clove 1
- Fresh or dried chilli, depending on tolerance 0.5
- Carrot 1
- Big potato 1
- White wine 60 ml
- Tomato 1
- Sugar (optional) 5 g
- Ground cumin
- Ground black pepper

Cut pork ribs into pieces the size to taste. Peel the potato and the carrot, cut it in half moons or cubes and chop the onion and the garlic clove. Heat two or three tablespoons of olive oil in a saucepan and brown the meat well on both sides. Withdraw and reserve. Cook the mustard, coriander, cumin and curry seeds in the same oil until they release their aroma.
Add the onion, the garlic clove and the minced chili without the seeds. Add a little salt and let the onion start to become transparent. Incorporate the carrot, the cascade potato into medium pieces and stir well. Add the ribs, season and season with the wine. When the alcohol evaporates, add the grated tomato, the sugar and cover with water or broth.
Bring to a boil, lower the heat and simmer for about 30 minutes, or until the potatoes are very tender. Remove the saucepan from time to time so that it thickens, and monitor the liquid level. Add a touch of ground cumin and black pepper at the end of cooking.
