Spinach and feta cheese crust, easy recipe with Thermomix
This recipe for spinach and feta cheese crust with Thermomix has been a real discovery and for a few months I have repeated it on several occasions. The contrast between the crunchy phyllo dough and the honeyed filling is wonderful, not to mention the taste.
Remember to mark the surface with a knife before putting the tray in the oven, because if you don't do it like this it will cost you a little later to cut it without breaking the crust.

Grate the chopped cheese 4 sec / speed 4, remove from the glass and reserve. Put the garlic, chives and 50 g of oil in the glass, chop 5 sec / speed 4. Put the Varoma in position with 300 g of spinach, cover and program 10 min / speed spoon. We remove the Varoma.
Add the rest of the fresh spinach, the Varoma spinach and 1/2 teaspoon of salt to the glass. Sauté 5 min / Varoma / vel 1. Grease a baking tray and place four sheets of filo dough on top, brushed with oil or butter one by one.
We distribute the sautéed spinach, half of the grated feta cheese and another four more slices of filo dough brushed one by one with oil or butter. Sprinkle the rest of the feta cheese on top, cover with the last four sheets of greased filo dough and seal the edges.
With a sharp knife we make some cuts on the surface of the dough forming squares to facilitate the cut later. Pour the milk, cream, eggs 1/2 teaspoon of salt, pepper and nutmeg into the glass. Mix 10 sec / speed 3 and pour this mixture over the dough.
We put the tray in the oven preheated to 180ºC for 30 minutes or until the surface is golden brown. Let it warm before serving.

I advise you not to let this recipe for spinach and feta cheese crust cool too much with Thermomix before serving it, as this way the phyllo dough will be more crunchy.
