Castilian chickpea cream, the spoon dish that will brighten up your dinners


Given the success we had at home when we had the Crecy carrot cream for dinner, this week I prepared another classic cream for dinner, specifically, the Castilian chickpea cream, the spoon dish that will brighten up your dinners that you can also serve as a starter or first course at noon.

Do not confuse the Castilian cream -which is made with chickpeas, potato and leek- with the Castilian soup or garlic soup, -made with garlic, stale bread and paprika-, even though both are delicious spoon dishes and very easy to prepare. .

  • Cooked chickpeas (can be canned) 400 g

  • Vegetables soup 500 ml
  • Single cream for cooking or whole milk (optional) a splash
  • Sesame seeds for garnish

How to make Castilian chickpea cream

To make this recipe, we can use dried chickpeas, in which case we will have to cook them separately for 3 hours over low heat or 45 minutes in a fast pot, we can use leftovers from a Madrid stew, or if we want we can also use a jar of cooked chickpeas, after rinsing them well and draining them.

So that the cream has an interesting flavor, we start by preparing a sauce with the leek, finely chopped, which we will cook over low heat until it begins to caramelize. To do it, we will use the same tricks as when we make caramelized onion, to have it ready in about 30 minutes.

Meanwhile, we take the opportunity to cook the potatoes and carrots cut into small pieces so that they do not take long. When they are, we mix them with the caramelized leek, we also add the cooked chickpeas and add the vegetable broth, or if we prefer, a homemade chicken broth.

Let it simmer for 10 or 15 minutes and then mash everything with a fine masher, so that it is creamy and uniform. If necessary, we can add a splash of milk or liquid cream to obtain a creamier texture. If you prefer, you can use a hand mixer or the Thermomix for that purpose. Once the cream is ready, we decorate it with some sesame seeds and thyme leaves and we take it to the table very hot.

With what to accompany the Castilian chickpea cream

To accompany the Castilian chickpea cream, we can use croutons, or make a sauté with mushrooms and diced ham, all very chopped and serve a tablespoon over the cream. After this splendid spoon dish, I recommend an easy dessert like the pear tart and lemon cream, so that everyone ends up delighted with your art in the kitchen. s
