Cream of rice with carrots
This is an ideal recipe for the season of the year that will begin shortly. The cream of rice with carrots is very easy to make and does not take a long time to prepare. It is a nutritious dish that has astringent properties and makes it easier for us to digest well.
The ingredients ¾ kilo of carrots, 1 lemon, 1 clove of garlic, 2 chives, 1 and a half liters of chicken broth, 50 grams of butter, 200 grams of rice, a little nutmeg, a few sprigs of parsley, pepper and salt .
The preparation Peel and chop the garlic clove and chives, clean the carrots and chop them finely. In a saucepan, melt the butter over low heat and slowly fry the onions, garlic and carrots until you see that the whole is tender. Add half of the broth to the saucepan and put over medium heat, bring to a boil and then remove the saucepan from the heat. Blend with the mixer until you get a homogeneous cream.
Put the saucepan back on the heat, add the nutmeg and season with a little salt. Now add the rice and the rest of the broth, letting it cook for another 15 minutes.
Remove the cream from the heat and add some grated lemon peel, finally, sprinkle some previously chopped parsley and you can now arrange the cream on the serving plates.
