Cream of beans with mint. Vegetarian recipe


Now is the season for beans and peas. I love these two legumes. I'll even tell you more: I've always liked to reel them out!

I must be weird but it relaxes me a lot to sit on the sofa with a bag of beans or peas in its pod, a plate on my lap and pick the pods one by one: break the tip, pull down and remove the green pearls from their inside; break the tip, pull down and remove the green pearls from inside. And again. Until the plate is filled with hundreds of shades of green and thousands of shapes: no bean or pea is the same, have you noticed?

But please don't let me beat around the bush. I'll tell you: Cream of beans with mint. Vegetarian recipe.

Ingredients for 2-3 people

400 gr. of shelled broad beans, 3-4 potatoes, 2-3 spring onions, 4 young garlic, a few sprigs of mint, others of marjoram, 1 dry bay leaf, extra virgin olive oil (EVOO), salt and pepper.

The preparation of the bean cream

The preparation of this dish has no secret. Peel the potatoes, chives and garlic. Sauté in a little bit of EVOO chives and garlic cut into small pieces. Season with salt and pepper. Then we add the beans and potatoes and cover with water.We add the herbs and let it boil for about 30 minutes or so.

Once the beans are very tender, we transfer the vegetables to another container with a little of their cooking water and we pass through the turmix until we get the creamy texture that we like. You have to insist a little with the blender, because the beans have a skin that costs a little to crush. At this point there are those who add a little liquid cream to the cream. I do not put it.

Once with the right texture, decorate with fresh mint and serve in individual plates.

The tasting

This mint bean cream can be used for both a light dinner and a starter at lunch. It is a dish in which we have not used meat at all, it is therefore suitable for vegetarians.

The basis of the elaboration, that is, combining the beans with the herbs from the garden (mint, marjoram, etc.) is found in a traditional Catalan recipe: les faves a la catalana, in which we have removed the meats so that it is not a heavy plate.
