Potato and apple cream. Recipe


For those who like soups and creams, this recipe for cream of potato and apple is delicious. And it is very simple and easy to prepare. It is also a recipe very in tune with the celebration in 2008 of the International Year of the Potato decreed by the United Nations.

The ingredients: (for 3 to 4 servings) 3 potatoes, 1 large red apple, 1 sprig of chives, 1/4 cup of milk, salt and pepper. Olive oil and a few sprigs of chives to serve.

Preparation: the potatoes and apples are peeled and the white part of the chives is cut and placed in a saucepan with salted water and left to cook until the potatoes are soft.

Once cooked, they are passed through a strainer and the cooking water is reserved. The milk and about a cup of the water are added and with the help of a mixer it is processed until obtaining a very creamy consistency. Finally, salt and pepper are added to taste.

When serving time, add a drizzle of olive oil and a little chopped chives to each plate or bowl.
