Cold cream of cucumber and melon. Recipe


Another of the great seasonal products, present in many of the summer recipes, is cucumber. Along with tomato, it is one of the main ingredients in gazpachos and cold soups. In this recipe for Cucumber and melon cold cream, it takes a special role together with the melon, with which it combines perfectly. This recipe is ideal when we buy a melon that is still green and has a cucumber flavor.

Ingredients: 2 medium cucumbers, ½ Piel de Sapo melon, 2 Greek yogurts, 4 small cheeses, 1 clove of garlic, a couple of fresh mint sprigs (½ tablespoon if dry), olive oil, ground black pepper and salt.

Preparation: Peel the cucumbers and cut them into quarters, removing the seeds. Do the same with the melon. Blend the cucumber and melon with the help of a mixer. Then add the yogurts, cheeses, garlic, mint, a good drizzle of oil, pepper and salt

Process the mixture until it is completely homogeneous, adding water if we see that it is too thick for our taste. Test the salt point and rectify if necessary. Refrigerate in the fridge for a couple of hours and serve very cold.
