Fried cream. Recipe

If I like fried milk, I have discovered that I love fried cream. You have to see how rich and fun it is to make this recipe.

It can also be made entirely with cornstarch, removing gluten from the recipe completely.

Ingredients for 6 servings

  • 1 liter of milk, 100 gr of sugar, 2 eggs, 4 egg yolks, 80 gr of cornstarch, 1 lemon peel and 1 cinnamon stick. Also for frying, flour, oil and beaten egg.

Making the fried cream

We put the milk to boil with the lemon peel and the cinnamon.

Mix, separately, cornstarch and sugar with eggs and yolks. A well fluid mixture should remain without overworking it.

When the milk boils, remove the lemon peel and cinnamon. We add half to the previous mixture and mix well. Then we add the rest of the milk and bring it to a boil again.

Stir well and continuously to prevent it from catching on.

We pour on a mold that we have previously smeared with butter and powdered icing sugar.

To prevent crust from forming, cover with a transparent film and let cool in the fridge.

Once cold, carefully unmold, turning the mold on a tray and cut into portions. We go through flour and beaten egg and brown in very hot oil.

When leaving we drain them and if we want we pass it through sugar and cinnamon (mixed).

Tasting

Fried cream recipe like its predecessor, fried milk, tastes much better hot. I prefer it to be sugar or cinnamon and with a little lemon sorbet.
