Banana pancakes and apricot jam. Dessert recipe

I already told you that one of the advantages of making crêpes is that once a good tower has been prepared, it can be frozen and for that reason, with those that I had left over when making the chicken, leek and corn crêpes, I have prepared a delicious recipe for dessert, some banana crêpes and apricot jam.

To make them, simply remove the crêpes from the freezer and leave them at room temperature for a quarter of an hour. And with this special filling, we have ready an easy and quick dessert that is prepared as you will see now, in a few minutes.

Ingredients for 4 people

  • 8 pancakes (125 g of flour, 2 eggs, 25 g of butter, 250 g of milk and a pinch of salt. Butter to cook them)
  • For the filling 3 bananas and 4 tablespoons of homemade apricot or peach jam

How to make banana pancakes and apricot jam

To make the pancakes, mix the flour with the eggs and gradually add the milk and the melted butter. Let the resulting dough rest for half an hour in the fridge. We make the crêpes by putting a ladle of dough in the very hot pan and stacking them as we finish.

If we use frozen crêpes from another day, we defrost them slowly at room temperature. Then it will be enough to run each pancake for 30 seconds on each side of the pan to have them as freshly made.

To prepare the filling, cut the bananas into slices and sauté them in a pan with a teaspoon of butter or oil. We don't leave them too long so they don't fall apart. When they start to melt, add the jam.

Sauté the whole until the two ingredients amalgamate a little and reserve. In another frying pan, heat the crêpes one by one for 30 seconds and cover half with the filling, folding it and serving immediately.
