Rice paper squares stuffed with prawns and sea lettuce. Recipe
Today they kidnapped me, warning me in advance, to go to Ikea to redecorate my life, that of my house and almost that of the entire neighborhood. But since it was a kidnapping with warning, I had time to make a recipe for squares of rice paper stuffed with prawns and sea lettuce.
With the holidays I had lost the habit of making an Asian recipe a week, but thanks to the seafood oil I have been able to reuse the prawns. It also had some dehydrated seaweed and the whole has not been bad at all.
Ingredients for 2 people
- 1 egg white, 2 teaspoons of cornstarch, 2 teaspoons of rice vinegar, 1 teaspoon of sugar, 2 teaspoons of soy sauce, 12 prawns, 10 g of dehydrated sea lettuce, 1 spring onion, 4 papers of rice for rolls, olive oil and salt.
Making the stuffed rice paper
First we have to beat the egg white a little and add the cornstarch, vinegar, sugar and soy sauce. Mix and add the cooked prawns and the hydrated sea lettuce.
On the other hand we soften the rice papers in water. We soak them for 15 seconds, take them out and dry them slightly.
We put a little of the mixture (with 3 prawns) in the center of each rice paper and close in the form of a package or square.
We heat the olive oil in a frying pan, which is abundant, at least it reaches half of the packages. When it's hot, add the filled rice paper squares and brown them on both sides until crisp.
We take out, drain the excess oil and serve.

To serve the rice paper squares stuffed with prawns and sea lettuce, do not hesitate to accompany them with some of those sauces that we like a lot, spicy, soy, sweet and sour, etc. Of course, they are always very hot, they are crunchy on the outside and soft on the inside thanks to the spongy whiteness.
