Almond cupcakes with orange icing, a recipe so easy even a child can make it
This recipe for almond cupcakes with orange icing is so easy to make, so much so that you could almost make it a child by yourself. We love that the little ones help in the kitchen, always under the supervision of an adult, and this is a good recipe to start them in the baking.
The molds we have used were small, so the dough ended up sticking out of them, because the cupcakes grew a lot, so the next time we make them we will use larger molds or we will have to fill them less. Take advantage now that the oranges are ripe, there is nothing like using seasonal fruit!

We start by turning the oven on at 180ºC and preparing a cupcake tray with 6 cavities. Separate the whites from the yolks and beat the yolks with the sugar, until the mixture blanches.
We beat the egg whites until stiff and incorporate them into the previous mixture, mixing them with enveloping movements. Add the ground almond and yeast and mix.
We distribute this dough in 6 paper molds for cupcakes and place them on the tray that we had prepared. Bake them for about 25 minutes or until a toothpick sticks it out clean.
For the icing, we sift the ground sugar and add the juice of half the orange little by little, until you get a icing with the appropriate consistency to distribute it over the cupcakes. Garnish with the other half of the sliced orange.
