Duo of chocolate mousses and Afuega’l pitu
Oscar Farkoa, who is passionate about gastronomy like us, wanted to share with all the readers of Directo al Paladar the recipe for a delicious dessert that we can enjoy after a festive meal. Judging by the ingredients it presents, the combination will be very seductive for the palate, it is the Duo of chocolate mousses and Afuega’l pitu
The ingredients 100 grams of Afuega'l pitu cheese (an Asturian cheese made with pasteurized Friesian cow's milk), 200 grams of whipped cream, 100 grams of 70% cocoa chocolate, 1 tablespoon of butter, 1 egg, 2 tablespoons of sugar and a mixture of dried fruits (walnuts, almonds, hazelnuts ...).
The preparation In a large bowl, add the crumbled cheese together with the 100 grams of sugar, mix the whole well and carefully add the whipped cream, mixing with enveloping movements. Distribute the resulting dough into four individual bowls. Now prepare the chocolate mousse, for this, melt the chocolate in a saucepan in a double boiler, then remove the saucepan and add 1 egg yolk, 1 tablespoon of butter, 2 tablespoons of sugar and finally 1 egg white previously beaten to the point of snow. Gently and gently mix the contents of the saucepan.
Pour the chocolate mixture over the bowls, trying to distribute it evenly and reserve in the fridge for a couple of hours so that it sets well. Just before serving, remove the bowls and add a handful of assorted nuts to each.
The tasting We have not tried it, but we plan to enjoy this dessert this weekend and we will follow Oscar's recommendations. It tells us that there is a variant of this cheese that presents paprika, resulting in a much more daring dessert, we will try it. We would like to have the opinion of those who enjoy this recipe.
