El Bulli is not profitable, pose or reality?
It is difficult to distinguish reality from the pose of the artist. The statements of Ferrán Adriá who has confessed that his business, the best restaurant in the world and with a menu that is around 250 euros, does not give benefits, have given me a lot to think about.
Only gives to live, these are his words about it. And I, who am skeptical, ask myself: to live how? Like a working family of four who eat and carry on with scarce 1000 euros? Or like a newly minted rich man who lives in a big house and doesn't deprive himself of anything? El Bulli generates an important business that is not left alone in Cala Montjoi, as can be seen on its website, whose job applications are derived to five different destinations.
I do not doubt that such a careful, experienced and well-worked kitchen requires a great investment in personnel, but we all know that in certain restaurants young chefs kill themselves for doing unpaid stages, and I suppose that El Bulli will not be an exception. Nor is it a question of requesting an audit, Adriá has nothing to prove, but in these times when small entrepreneurs go through so many difficulties, you have to be cautious with certain statements.
