The Oberon publishing house has released the book "The Cook of Azaña: Leisure and Gastronomy in the Republic", where the author, Herreros Isabelo, tells us how we Spaniards ate and had fun before the dictatorship. With the establishment of the Second Republic in 1931, modernity and freedoms arrived in Spain and the premises began to proliferate with musical performances, the music hall, cocktail bars, cafes and night-time bars; modern restaurants with cosmopolitan cuisine and new venues that closely followed the fashions of Paris or New York.
