Chicken gratin enchiladas with green sauce. Easy Mexican recipe

Usually when we are outside of Mexico it is very easy for us to buy those famous packages with almost everything ready that are unattractive industrial products. The best, as always, is to make the recipes ourselves in a more natural way.

Today I propose you a delicious recipe for chicken gratin enchiladas with green sauce that is a classic of Mexican food. It is very simple to make and you can find all the ingredients very quickly. For the Mexican green sauce and corn tortillas, you can find them in the Mexican products sections of the vast majority of supermarkets.

  • Chicken breast 2
  • Corn tortillas 8
  • Purple Onion
  • Green Mexican sauce 200 ml
  • Liquid cream 100 ml
  • Edam or Manchego cheese 200 g
  • Chicken soup 150 ml
  • Sunflower oil 30 ml

How to make chicken enchiladas au gratin with green sauce

We are going to boil the chicken breast for about 20 minutes and then shred it. Meanwhile, we chop the onion that we put to fry in a pot with a tablespoon of vegetable oil. We pour the green sauce and the chicken broth. Stir, adjust the seasoning with a little salt. We leave on the fire over low heat for about three minutes. Add the cream, stir again and leave another five minutes on the fire.

Heat a tablespoon of vegetable oil in a pan. When it is very hot we pass the corn tortillas quickly through the oil. We leave them for a minute and remove them. We place a tablespoon of shredded chicken on the end of each tortilla and roll them up. As we do, we place each chicken flute on a baking sheet. Top with the creamy green sauce. We cut the cheese into slices or grate it. We cover the cheese flutes. Bake at 200ºC for about 20 minutes, until it is well gratinated.
