Cajun shrimp and potato salad. Recipe
Every day I like the taste of Cajun or Creole cuisine more, so taking advantage of my new “obsession“For salads, I wanted to try this Cajun Shrimp and Potato Salad recipe inspired by those traditional flavors.
As a separate note, I would like to clarify that it is evident, from the amounts that I give in the ingredients of the Cajun seasoning, that we will get a little more than the tablespoon that we need to cook this recipe, but we should not worry, we will only have to store it in a spice jar and use it to season meats, fish, stews and rice, for example.
- For the salad: 500 grams of new potatoes, 500 grams of cooked and peeled prawns, 200 grams of mesclum, 2 small spring onions, 2 ripe avocados, garlic, olive oil, 1 tablespoon of Cajun seasoning, salt and pepper.
- For the Cajun Seasoning: 1 tablespoon salt, 1 tablespoon garlic powder, 1 tablespoon dried onion, 1 tablespoon oregano, 1 tablespoon parsley, 1 teaspoon hot paprika, 1 teaspoon black pepper, 1 teaspoon dried thyme , 1 cayenne, 1 bay leaf, 1/2 teaspoon of cumin.
How to Make Cajun Shrimp and Potato Salad
Cook the potatoes in salted water, when they are tender, drain them, let them cool a little, peel them and cut them into slices.
We prepare the Cajun seasoning by passing all the seasoning ingredients in a blender. As we are going to get a good amount we will keep it in a spice jar that we have empty.
We cut the onion into julienne. Peel and crush the garlic. Peel and dice the avocado.
In a large frying pan we put a few drops of oil, add the prawns, garlic, onions and a tablespoon of the Cajun seasoning. Sauté everything for 3 minutes, just until the prawns are hot.
Next, add the potato slices and cook them for 2 minutes, stirring carefully, so as not to break the potatoes too much and so that they take on the flavor of the seasoning.
Assemble the plate by placing the mixture and the avocado pieces at the bottom of a bowl, pouring the prawns and the potatoes from the pan on top.
Season with a drizzle of olive oil and lightly season with salt and pepper.

We will try to serve this cajun shrimp and potato salad warm, for this we will leave the sautéed shrimp and potatoes for the last moment.
If we want to make it a little more complete, we can add some alfalfa sprouts for example.
