Fish salad with Chinese noodles
This recipe is without a doubt a mix of Mediterranean and Chinese cuisine. The fish salad with Chinese noodles will delight our guests, with a delicious combination of flavors that will be enjoyed in each bite.
The ingredients 1 ½ kilo package of Chinese noodles, 400 grams of mussels, 2 hake slices, 2 monkfish slices, 1 onion, 1 red pepper, 1 glass of wine, a little oil, salt and pepper. For the dressing 1 tablespoon of lime juice, 2 fingers of cooking broth, 1 tablespoon of grated ginger, 1 pinch of cumin, a little chopped chives, 2 fingers of olive oil, pepper and salt.
The preparation Clean the mussels well, scratching the valves to make them clean and place them in a pot next to the white wine. Cook them over high heat until you see that the mussels have opened, then remove the pot from the heat and drain the mussels. Remove one of the shells from the mussels and strain the cooking broth, reserving it to make the sauce. Now we will go on to prepare the fish, remove the skins and bones from the slices and cut everything into small cubes. Also cut the pepper into julienne strips and the onion into thin slices.
Cook the Chinese noodles until you see that they are just right, while heating a little oil in a pan and sauté the onion slices and the pepper julienne, then remove the sauté from the pan and reserve it.
In the same pan, fry the fish cubes and when they are done, reserve them as well. Arrange the noodles in a salad bowl and add the mussels, fish, onion and pepper that you reserved. Now we make the sauce, mix the chives, cumin, ginger, oil, lime juice, the broth from the mussels, a little pepper and salt. Mix well and season the contents of the salad bowl.
