Sushi salad. Japanese recipe


Sushi rice, once cooked and flavored with vinegar, sugar and salt, is perfect for many preparations, such as this original and very healthy sushi salad, which the cook Emi Kazuko offers us in her interesting book "26 sushi recipes". that I recently commented on our blog.

Of course, you can let your imagination fly and create your own salad, adding fresh fish, such as tuna or salmon, either raw, sliced, or marinated, or even grilled in a short time.

Ingredients (4 people):

About 400 gr. of rice for sushi, already prepared following our advice, using 225 gr. glutinous rice, 300 cc. water, 3 tablespoons of white wine vinegar or Japanese rice, 2 teaspoons of sugar, half a teaspoon of salt.

8 prawns, half a cucumber, 12 cherry tomatoes, 3 lettuce leaves, 5 tablespoons of sesame seeds.

For the dressing: 1 tablespoon of white wine vinegar, 3 tablespoons of virgin olive oil, 1 teaspoon of mustard.

While the rice is cooking, remove the head and intestinal tract of the prawns. To do this, insert a toothpick between two segments of the exoskeleton, pulling up to remove the intestine (see photos). Cook the prawns in boiling salted water for 3 minutes over high heat. Move to a bowl with cold water, if you want with some ice cubes. Chill and peel carefully.

Peel the cucumber, leaving part of the skin. Cut in half and remove the seeds. Cut into small pieces. Mix the vegetables in a salad bowl, along with the cucumbers.

Divide the sushi rice into four bowls, cover with the lightly toasted sesame seeds, garnish with a little salad, spreading the prawns. Garnish with the dressing and serve immediately.

Preparation time: 20 minutes, plus the time to prepare the rice. Difficulty: Medium

Serve in individual bowls, and use Japanese wooden chopsticks, hashi, to eat this exquisite sushi salad.

Sushi rice, once prepared, should not be put in the refrigerator, as it becomes caked and very dry. Therefore, prepare the right amount that you are going to use. If you are preparing for two people, use half of the ingredients.
