Spinach, rich in vitamins and minerals
Spinach is a vegetable native to China. It is very rich in vitamins and minerals, even though it does not have as much iron as we were led to believe as children with the Popeye comic.
Its leaves can be eaten raw in salads, thus making the most of its nutritional properties. And cooked they can be consumed in pasta, creams, cakes, with eggs and in many other preparations.
One of these ways is in a rich and easy spinach omelette. Ideal for when we don't have much time to cook. The ingredients: 250 grams of spinach leaves without the stems, 1 small onion, 100 grs. mozzarella cheese, 5 eggs, olive oil, salt and pepper to taste.
preparation: In a frying pan, sauté the chopped onion and the spinach leaves, cut into julienne strips in olive oil. In a bowl, place the 5 beaten eggs and the mozzarella cheese cut into small cubes, add the sautéed spinach and add salt and pepper to taste. Place the mixture in a pan and cook on both sides.
The amounts are approximate, you can add more or less eggs depending on the consistency you want in the omelette. You can also add other ingredients such as ham or mushrooms.
