Beef stew with beer with meatballs. Recipe

Browsing these days through my cookbooks, looking for a meat dish, I have found this recipe for beef stew with beer with meatballs, taken from one of the books of the famous and unorthodox English chef Jamie Oliver. Although Mediterranean and Asian-inspired dishes predominate in his books (perhaps that is due to his success), he also offers interesting traditional English dishes, like the one I have chosen on this occasion.

As you will see, it is not exactly a light dish, but with the arrival of the first cold temperatures, more consistent meals are beginning to be desired.

Ingredients for 4 people.

500 gr. beef (shank or blood sausage), 3 tablespoons of flour, olive oil, 2 red onions, 25 gr. smoked bacon, 2 celery sticks, a sprig of rosemary or thyme, 600 cc. black beer, 2 turnips, 2 carrots, 2 potatoes, salt, freshly ground black pepper.

For the meatballs: 100 gr. flour, 1 teaspoon of royal yeast, 50 gr. butter, pinch of salt and pepper, a tablespoon of parsley leaves, half a teaspoon of mustard powder.

Elaboration.

Salt and pepper the meat, cut into small cubes. Lightly flour and sauté with a string of oil in a large heavy-bottomed pot, stirring continuously until the meat is browned. Lower the heat and add the finely chopped onion and bacon, and cook until the bacon is browned and the onion is transparent. Add the celery and rosemary, chopped, and cover with the beer and a glass of water.

Add the peeled and diced turnips, the carrots, peeled and in 1 cm chunks, and the potatoes in medium pieces, peeled as well. Bring to a boil, cover the pot, and simmer the stew.

While preparing the meatballs by mixing the ingredients in a food processor or by hand, until they have the consistency of bread crumbs. Add a little water, about 25 cc., Just enough to make a dough that does not fall apart. Knead dumplings the size of a “ping-pong ball” with moistened hands. Mix the meatballs with the stew, stir and cover again. Let it simmer for two hours, taking care that it does not stay dry, adding a pinch of broth or water if so.

Tasting.

Serve this beer stew with meatballs Accompanied by salad and a lot of bread, to dip the sauce (and don't let anyone tell you it's rude). Then I would advise a good walk to lower the calories of this dish.
