Chicken fajitas with vegetables, traditional Mexican recipe

Normally we do not usually eat this type of food very often, and if we do we reserve it for a Friday night or weekend in which we indulge in a different gastronomic whim. Although these chicken fajitas with vegetables are not exactly the same as any Mexican recipe, we assure you that our adaptation is fantastic and you will love it.

You have the recipe for wheat flour tortillas recently, so there is no excuse to continue buying those preparations in the supermarket that we do not know well what they contain. Of course, if you have access to original Mexican products, substitute the peppers for them, the same happens with spices. With this recipe we show you the options that we find in Europe easily.

Ingredients

  • Flour tortillas 8
  • Chicken breast 200 g
  • Colored peppers 3
  • Onion
  • Garlic cloves 2
  • jalapeno pepper 1
  • Ketchup 50 ml
  • Extra virgin olive oil 5 ml
  • Salt to taste
  • Ground black pepper to taste

How to Make Vegetable Chicken Fajitas

In a wide frying pan we heat a little extra virgin olive oil together with two cayenne peppers. Sauté the chives and the peppers cut in fine julienne. When they are tender, add the minced garlic cloves. Once browned, add the chicken breast cut into strips, season with salt and pepper and sauté the whole.

Pour a splash of wine, turn up the heat to evaporate the alcohol and add a little tomato sauce to taste, making the mixture juicy. Remove the cayenne if we don't want the filling to be very hot and cook over low heat for five minutes. We remove from the heat and fill the flour tortillas. We serve immediately.

I always do everything at the same time, the flour tortillas and the filling, since since the dough must rest for a little while, while we take the opportunity to poach the vegetables and chicken, so we will have everything ready almost at the same time.
