Soba noodles recipe with beef carpaccio and spicy dressing
Soba noodles are very versatile, they lend themselves wonderfully to prepare a stir fry as a soup, and also for cold dishes. It may seem strange to serve a beef carpaccio like this, but the lightness and softness of this meat goes very well with the noodles. - Garlic clove 1
- Fresh ginger chunk 1
- Dijon mustard 5 ml

Bring water to boil in a large pot or casserole. Add the soba noodles, stirring well, and return to a boil. Cook over medium heat for about 5 minutes, or follow the manufacturer's instructions. Drain, rinse in cold water and set aside.
Cut the meat of the veal carpaccio into thin strips. Chop the garlic clove and ginger very finely. Mix with the mustard, chili paste, vinegar, oil, salt and pepper.
