Soba noodles recipe with beef carpaccio and spicy dressing


Soba noodles are very versatile, they lend themselves wonderfully to prepare a stir fry as a soup, and also for cold dishes. It may seem strange to serve a beef carpaccio like this, but the lightness and softness of this meat goes very well with the noodles. The final point of spiciness will depend on the tolerance of each one.


For 2 persons
  • Soba noodles 150 g
  • Beef carpaccio 200 g
  • Garlic clove 1
  • Fresh ginger chunk 1
  • Dijon mustard 5 ml
  • Hot chili paste or to taste 2 g
  • Rice vinegar 5 ml
  • Extra virgin olive oil 45 ml
  • Salt
  • Ground black pepper
  • Sesame seeds

How to make soba noodles with beef carpaccio and spicy dressing

Bring water to boil in a large pot or casserole. Add the soba noodles, stirring well, and return to a boil. Cook over medium heat for about 5 minutes, or follow the manufacturer's instructions. Drain, rinse in cold water and set aside.

Cut the meat of the veal carpaccio into thin strips. Chop the garlic clove and ginger very finely. Mix with the mustard, chili paste, vinegar, oil, salt and pepper.

Arrange the noodles in two bowls, spread the meat over the top and season with the dressing to taste. Garnish with a little sesame seeds.
