Peach and Cheese Stuffed Fillet Recipe
There are recipes that captivate us as soon as you see them. This happened to me with the recipe for fillets filled with peach and cheese that I saw in a reading special last year and I kept it in my memory until I prepared it this summer, when I found seasonal peaches again. Attentive that my version of this recipe has been a delight.
The recipe has been prepared using a cheese from a mixture of goat milk payoya and sheep from Grazalema that I told you about the other day, a semi-cured buttery cheese that brings a delicious touch of flavor and creaminess to this preparation. With the roasted peach inside and a creamy sauce with mustard and pistachios, I assure you that you will love it.

We cut some very thin semi-cured cheese slices and remove the crust. We spread the fillets on the table and hit them with the rolling pin to make them very thin. On each of them we place the slice of York ham, two slices of cheese and some slices of peach trying to make all of them very thin.
We roll the fillet into a cylinder and secure it with two skewers so that it does not open. In a frying pan we fry it over high heat to brown its exterior. Then we finish it in the oven allowing it to cook at 180º for 25 minutes.
At that time we prepare the sauce, mixing the cream with the mustard and adding the peeled pistachios and the pieces or cuttings of peach that we have left over. Let it cook for 5 minutes and it is ready to be placed at the bottom of the plate.
We remove the fillets from the oven, cut them in half giving a diagonal cut and place them on the sauce, decorating the plate with arugula leaves and sprinkling with more raw pistachios that will give a crisp note. To the table that gets cold!
