Almond flan recipe, to treat yourself

Yes, I know, I know: it is very hot and where am I going now publishing an oven recipe. Oh, this almond flan is delicious and I couldn't resist preparing it when I saw the recipe in a magazine. As you can see, two capitas form, since the ground almond has a different density than the cream, but this is normal.

The effect means that on the one hand we have an egg custard, although much more reduced, and on the other the ground almond layer attached to the custard. We take it with a compote of red fruits, which, being acidic, combine wonderfully.

  • Sugar 100 g
  • Whole milk 250 ml
  • Egg 2
  • Ground almonds 65 g
  • Liquid candy

How to make almond flan

Ingredients for 4 servings

We heat the oven to 180º C with heat up and down without air. We beat the eggs with the sugar and the milk. Add the ground almond and stir. Caramelize the flan molds, or an ovenproof container, and pour the mixture carefully.

Place in a deep tray, cover with silver foil, and fill the deep tray with hot water more or less until it covers our flan molds in half. We cook in a bain-marie until the flans have set.

The cooking time can vary depending on our oven or simply by the amount of cream that we have put in the molds. Anyway, at least they should be cooked between 30 and 40 minutes for small molds.

With what to accompany the almond flan

Like any other flan, the almond flan should be eaten fresh. It is best to let it sit overnight in the fridge. We can accompany it with fruit or ice cream, it looks great.
