How to make the popular fougasse bread, recipe with Thermomix


I had been wanting to prepare this fougasse recipe with Thermomix for a long time. I used this robot for convenience in kneading, but you can well prepare it without it. To do this, we dissolve the yeast and brown sugar in the warm milk, leave it for ten minutes, add the rest of the ingredients and knead.

A fougasse is a French bread, especially linked to Provence. Many times it has added ingredients (olives, raisins, bacon, anchovies, etc.) either before or after cooking. Traditionally, this bread was used to calculate the temperature of the oven, the time it took to cook gave an idea of ​​it.

  • Baker's pressed yeast 25 g

  • 1 teaspoon brown sugar

  • Olive oil 40 g
  • 1 teaspoon salt

Put the crumbled yeast, milk and sugar in the glass and program 2 min / 40º / speed 2. Add the flour, oil, salt and knead 5 min / speed spike. We let it rest in the glass for about 30 minutes or until the beaker rises.

We remove the dough from the glass, form a ball and stretch it into a heart shape until it is 1.5 cm thick. We place it on a baking tray lined with waxed paper, we paint the surface with more oil and, with scissors, we make some cuts, removing a little the dough to form the holes.

We spray the bread with water using a sprayer, we let it rest for fifteen minutes in a place without drafts. Meanwhile, we preheat the oven to 220ºC and bake it for about twenty-five or thirty minutes.
