Mixed vegetable frying "in saor". Vegetarian recipe

This dish is based on a traditional dish of Italian cuisine, sardines "in saor". In this case, we substitute the fish for a light sauté of various vegetables, and it is marinated at the end with an aromatic sauce based on cumin, vinegar and orange zest. The mixed vegetable frying "in saor" is an original vegetarian recipe.

Ingredients (4-5 people):

1 zucchini, 200 gr. peeled carrots, 1 onion, flour, to coat, a bay leaf, 100 cc. white wine, 100 cc. white wine vinegar, 2 thin strips of orange peel, pinch of salt and cumin. Oil, for frying. Elaboration:

Cut the zucchini, carrots, and onion into very thin slices. Lightly flour each vegetable separately, and also fry separately, until golden brown. Drain well on absorbent paper and reserve.

Mix the vinegar, wine, bay leaf, orange peel, salt, and cumin in a saucepan. Heat until it starts to boil, remove from heat and mix with the fried and drained vegetables.

Serve this delicious mixed vegetable fry "in saor" as a starter. If you want you can add other vegetables, always thinly sliced, such as potatoes, or even beets, for example.
