  • Extra virgin olive oil 55 ml
  • Pastry flour 280 g
  • Salt 2 g
  • Chemical yeast 6 g
  • Vanilla 2.5 ml
  • Almond or hazelnut crocanti

How to make olive oil cookies with almond crocanti

Put two eggs in a bowl and set the other aside. Beat them with the sugar using a whisk until you have a homogeneous and somewhat frothy mixture. Add the olive oil and vanilla and beat a little more.

Place the flour with the yeast and salt in another larger container. Pour in the mixture of wet ingredients and work the dough until it is homogeneous and smooth. Knead and form a disk, wrap in plastic wrap and leave in the fridge for at least 30 minutes.

Preheat the oven to 180º C and prepare a tray. Place the chilled dough on a lightly floured surface and roll out to a thickness of 5-6 mm. Cut out the cookies and distribute them on the tray, separating them a little from each other.

Beat the remaining egg and paint the cookies. Garnish with almond or hazelnut crocanti to taste, pressing lightly. Bake for about 15 minutes, until golden brown to taste. Wait a couple of minutes out of the oven and let them cool completely on a rack.
