What happens when they give you a kilo of artisan honey and the nets flood you with recipes for spicy cookies? In my case it's clear: it's time to turn on the oven and remove the rolling pin. Despite the fact that my particular Christmas recipe book is already well stocked, I have not been able to avoid trying these cookies of honey, cocoa and Christmas spices, very simple and full of comforting aromas.

The hint of cocoa does not make them chocolate cookies but it does help create that aromatic combination so typical of Christmas and winter. Ideally, use a mixture of Lebkuchen or gingerbread, but it can be made homemade adapting it to taste, as indicated in the preparation. The different types of honey will give us different shades of color and flavor, you can use the one you like the most.

  • Honey 150 g
  • Unsalted butter 100 g
  • Brown sugar 100 g
  • Pastry flour 350 g
  • Cocoa powder 5 g
  • Chemical yeast 8 g
  • Gingerbread spice mix 5 g
  • Ground almonds 50 g
  • Salt a good pinch
  • Egg 1
  • Necessary icing sugar
  • Lemon juice 5 ml

How to Make Honey, Cocoa and Christmas Spice Cookies

Preheat the oven to 180ºC with a fan and prepare a pan of trays with parchment paper or by greasing them with butter.

For the homemade spice mix, mix together 1 teaspoon ground ginger, 1 and 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground star anise, ½ teaspoon ground allspice, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 1/4 teaspoon ground cardamom. Ingredients can be substituted to taste by increasing the amounts of the other spices or adding others such as anise beans, ground coriander, etc.

Melt the honey with the butter and sugar over low heat, mixing gently until everything is combined. Cool slightly. Mix the flour with the yeast, the cocoa powder, the ground almonds, the spices and the salt with a few separate rods. Add the other preparation, the egg and work until you have a homogeneous dough.

The dough should be moist but not sticky, smooth and shiny, still somewhat warm. Roll out on a clean surface leaving a thickness of about 5-6 mm, cut out biscuits and distribute on the trays. Bake for about 10 minutes and cool on a wire rack.

Serve as is or topped with a light icing of icing sugar with lemon juice. They hold up very well for a couple of weeks in an airtight container, or even longer, although they will begin to lose texture and aroma.

These cookies of honey, cocoa and Christmas spices are perfect to have on a beautiful tray next to the Christmas tree to offer to visitors or serve with coffee or tea for a snack. We could decorate them more carefully using royal icing and even make a little hole before baking to hang them on the tree.
