Pine nut cookies, recipe for a moment of whim

For breakfast I am sweet especially if I do it very early. It's one thing for you to have a salty snack at 11 in the morning, but before seven, I need sugar. For this reason, biscuits and cookies or pasta I usually make for everyday, and if a visit comes, I make some a little more special, like these pine nut cookies.

Since pine nuts are skyrocketing, you can also substitute them for any other dried fruit, or even dried fruit. You already know that depending on what things there is no problem in varying a recipe, that is, with this delicious butter base, invent your own homemade cookies.


For 40 units
  • Butter at room temperature 200 g
  • Icing sugar 125 g
  • Egg M 1
  • Salt
  • Vanilla
  • Pinions 100 g
  • Pastry flour 400 g

How to make pine nut cookies

Mix the butter with the sugar and the egg with the pinch of salt in a bowl. We add the vanilla extract or seeds and little by little the flour until we have a soft, slightly greasy dough, but that we can handle. Add half of the pine nuts and form a flattened ball, wrap in transparent film and refrigerate for at least an hour. We heat the oven to 180º heat up and down.

After the resting time we stretch the dough, between two oven papers, with a thickness of about 6mm, more or less, cut shapes with a cookie cutter or glass and place on a non-stick baking sheet or lined with baking paper.

Brush the cookies with beaten egg and sprinkle the rest of the pine nuts on top. Bake for 15 minutes, more or less, depending on the oven, until the cookies have a slight golden hue. Remove from the oven, leave on the tray for five minutes and carefully move to a rack so that they finish cooling.

Pine nut cookies are a real delicacy. With a good butter and this delicious dried fruit you can already imagine the result of these fine pastes. To preserve them, as always, keep them away from moisture, if possible, in an airtight can.
