Double peanut and chocolate cookies, a perfect match to sweeten the desktop

- Brown sugar 180 g

- Chocolate chips or chopped chocolate 100 g

Preheat the oven to 175 ºC and prepare a pair of large trays with sulphited baking paper, or with non-stick silicone sheets. Chop the chocolate (if chips are not used) and peanuts lightly by knife, without mashing them too much, and set aside.
Beat the butter with the peanut butter and sugar with a whisk for about 3-5 minutes, until the mixture is fluffy and homogeneous. Add the eggs and vanilla, and beat a little more.
Apart, sift the flour with the bicarbonate and the salt, and add it to the wet mass. Combine everything beating on low speed and finish mixing with a tongue or spatula. Add the chocolate and peanuts, reserving some to decorate at the end.
Take small portions of dough, with a teaspoon, and shape into balls with your hands. Distribute on the trays, flatten with a fork or finger and add a few pieces of peanut. Bake for about 10 minutes, until golden brown and firm.
Wait 5 minutes out of the oven before transferring to a rack to cool completely, and store in an airtight container.
