Cherry granita, easy recipe to beat the heat (no refrigerator needed)


The cherry slushie is one of those sweets that takes very little effort to prepare and is the perfect weapon to beat the heat. This particular recipe is made from a base of frozen pitted cherries, which are crushed with a syrup and lemon juice. It does not require a refrigerator, a point in its favor, although it is necessary to have a powerful blender that resists the harshness of frozen fruit.

  • Water 125 g
  • Cleaned and pitted cherries 525 g
  • Lemon juice 31 ml
  • Salt

How to make cherry slush

We wash the cherries, pit them and put them in the freezer for about 4 hours or until they are frozen. Meanwhile we heat the water, the sugar, the lemon juice and a pinch of salt. When it reaches the boiling point, we count two minutes, turn off and remove. We let cool before using.

Once the cherries are frozen, we place them in the glass of a powerful blender or food processor together with the cold syrup. Blend long enough to get a creamy puree. We have used a conventional robot and it took four minutes. We serve immediately or keep in the freezer until ready to consume.

With what to accompany the cherry granita

This cherry slush does not need an accompaniment. It is perfect to serve for dessert, as a digestive on a hot day. It is refreshing and the body will appreciate it. We can serve it with a glass or a splash of kirsch, for adults only.
