Although salads feel great when the heat is on, I enjoy spoon dishes much more. And there is always something more special: the chup-chup from the pot, the slow heat, keeping an eye on the casserole ... That's why recipes like this pork stew with potatoes always come back to our kitchen. Cut the meat into tacos or pieces the size of a bite, removing any possible excess fat. Finely chop the chives and garlic clove. Wash and peel the carrots and potatoes, cutting the first into slices and the second into not very large pieces, breaking them.
Heat a little good olive oil in a pot or casserole and brown the meat with the peppercorns over high heat, sautéing it so that it does not cook, and salting it slightly. Add the onion, garlic and bay leaf, and lower the heat a little. Cook until the onion is very tender.
Add the paprika and add the carrot, give a few turns and also add the potato. Add a pinch of salt and pour over the wine. When it evaporates, cover with broth or water, without spending much. Bring to a boil, cover, lower the heat and simmer for at least 25 minutes, or until everything is at the desired point. Check from time to time, correct the salt level and adjust the thickness to taste.
