I have long wanted to cook a hot plate with pineapple. With this winter cold it is sometimes difficult to drink it fresh, but I do not give up having it in my diet, which as Pintxo told us a few days ago, adds many benefits, and is also very good.
So today I have presented her to a very nice pork loin so that they could get to know each other and the result has been this Antillean pork stew, an intensely flavored dish with a bittersweet aftertaste that greatly benefits the grateful pork . This pork dish with pineapple comes from the Antilles, where, as they point out in Culinary World, it is frequent in celebrations.
Ingredients for four people
A kilo of fresh pork loin (unmarinated), a pineapple, an Italian green pepper, an onion, fresh parsley, vinegar, peppercorns, extra virgin olive oil, 150 g of sugar, water, a portion of demi- glace or a meat cube.
Preparation of the pork stew of the Antilles
We remove the layer of fat that covers the piece of loin and cut this into cubes. Sauté the chopped pork in a saucepan with a drizzle of oil until it changes color on all sides. Chop the pepper, parsley and onion very finely and add to the casserole. Let it fry for a few minutes and add five grains of pepper and salt.
We put the sugar in a saucepan with a tablespoon of water, we put it on the fire to make a caramel, while continuing to serve it, taking care not to burn it. When it takes color we add a vinegar stream with care, because it can jump and stir so that the caramel dissolves. Add the caramel to the stew.
Peel the pineapple, remove the central part and chop it. We make a puree with half and keep the other half chopped. We put the pineapple puree and the demi-glace or the cube of meat in the stew, mix well, cover with a glass of water and cook for thirty minutes or until the sauce appears creamy. After that time we add the chopped pineapple, mixing and after five minutes of cooking we already have the stew done.
