Chocolate cookie ice cream. Recipe
The truth is that I don't feel like turning on the oven or the kitchen on these hot days, so I have prepared this fun chocolate cookie ice cream, that is, ice cream of those cookies that have chocolate granules inside, very American style . Children, and many older adults, love these types of cookies, so this recipe is a fun way to take them.
For this ice cream we use a very creamy type of cheese, mascarpone, which many of you will know for being the one used for tiramisu, the quintessential Italian dessert.
250 gr. mascarpone cheese, 250 cc. whole milk, 100. gr. brown sugar, 150 gr. cookies with chocolate pearls.
Mix the mascarpone, milk, and brown sugar in a bowl, beating with a whisk or electric mixer until smooth. Go to an ice cream maker and freeze. If you don't have an ice cream maker, freeze the mixture in a metal tray, beating once it solidifies until creamy. Freeze again and repeat the process.
Once the ice cream is ready, crush the cookies with your fingers and add to the ice cream. Stir and refreeze the mixture until serving time.

Serve in glasses or crystal bowls. Don't over-crush the cookies, you like to have crunchy bits in the ice cream batter. Original, right?
