Tutti frutti ice cream. Recipe

The tutti frutti ice cream has always been one of my favorites, although I admit that it is not one of the most popular. I know there are many people who don't like candied fruits, but for me the combination of a soft buttery ice cream with the sweetness and chewy texture of the fruits is an unbeatable delight.

If you have had some candied fruits since Christmas and you do not know what to do with them, this is your recipe and I am sure that next Christmas you will get a good supply so that you do not miss them. The only secret for this ice cream to be really delicious is to make a good buttery ice cream that you can also make to eat alone.

Ingredients for 1.5 liters of ice cream

  • 1 liter of whole milk, 6 egg yolks, 350g of sugar, 50g of butter, a piece of lemon rind, a stick of cinnamon, 250g of assorted candied fruits
  • How to make tutti frutti ice cream

    We put the milk with the lemon rind and the cinnamon stick in a saucepan, bring to the fire until it is about to boil. Meanwhile, put the yolks and sugar in a large bowl and mix well. Gradually pour the hot milk over the bowl, stirring continuously.

    Once we have mixed all the milk, we put it back in the saucepan and put it on a low heat without stirring until the cream covers the surface of the spoon. The cream should never come to a boil and should not be thick. Strain the cream into a container and let it cool a little, stirring occasionally.

    When it is lukewarm, we are adding the butter in small pieces, beating until it melts and is completely emulsified. When the cream has lost the heat, we put it in the refrigerator until it is very cold. We put it in the fridge and while the ice cream is being made, we cut the candied fruit into small cubes. A little before the ice cream is ready, we add the candied fruits and let them mix well with the ice cream.

    To do it without a fridge, we mix the cream with the fruits and put it in the freezer in an airtight container, take it out before it is frozen and stir to break the crystals that have formed. We repeat this operation every hour for two or three more times.

    This tutti frutti ice cream will be a delicious summer dessert accompanied simply by wafers or almond tiles. And for adults, a splash of liquor will give it a special touch.
