Tigernut horchata: recipe with Thermomix
I still do not know how it has not occurred to me before to make this recipe for tigernut horchata with Thermomix, with which I like this refreshing drink for the summer. The other day I bought tigernuts for the first time and I think I have created a monster, or rather a family of monsters, because now my children ask me every day to prepare it for a snack.
The explanations are for the Thermomix, but with any other powerful kitchen robot you can also make this recipe, as it is about beating the tigernuts well with the rest of the ingredients. The good thing about making it at home is that we can customize it and add other flavors, such as vanilla or chocolate, if we like.

We started hydrating the tigernuts the day before. We put them in a large bowl and cover them with water, which we will change a couple of times. The next day, we drain the tiger nuts and put them in the Thermomix glass along with the sugar, the lemon peel and the cinnamon.
Blend for 10 sec / vel 7-10. With the spatula, we lower the remains that are on the walls and we crush again another 15 sec / speed 10. Add water until the mixture is covered and we mix again for 20 sec / speed 5-7-9.
Add the rest of the water and mix 20 sec / speed 4, while holding the beaker so that no liquid comes out. Strain using a fine mesh strainer and squeeze the mixture well with the help of a mallet to drain the liquid well. We put the horchata in a jar and store it in the fridge to drink it cold.
With what to accompany the tigernut horchata
Is there anything better than tasting a very cold glass of tigernut horchata when the heat is on? I can't think of a better way to fight it. If you want to have a frosted horchata, keep it in the freezer for a while, when it starts to freeze, break the crystals that have formed by beating with a fork and serve immediately. If you accompany her with fartons, you will feel as if you had moved to Valencia for a picnic.
