Duck ham, a delight
Duck ham barely has a life of twenty years, gastronomically clear, but it already has a place among the most special delicacies. The process to make said "ham" is very careful.
It is a duck breast, which once seasoned with salt, spices and aromatic herbs, must remain in natural drying rooms for a certain period of time, until it is completely cured. On the palate it is exquisite and delicate and it is a unique piece for good gourmets. It is recommended to use it in warm salads of raisins and pine nuts, with toasted bread accompanied by a good wine, although it has a great variety of very succulent combinations, as long as we achieve a perfect pairing between the ingredients.
Personally, we prepare a special salad based on lettuce (romaine or iceberg, depending on the market), arugula, oak leaf, lamb's lettuce, chives, semi-cured cheese, walnuts and duck ham with the corresponding vinaigrette, which as a result Makes a majestic salad with a great combination of flavors.
