How to Make Mashed Potato Lasagna

Difficulty: easy
  • Total time 1 hour
  • Elaboration 1 hour

We start by cooking the peeled and chopped potato with water and salt for 15 minutes. Afterwards, we pass it through the pastry, add a splash of olive oil and ground black pepper and reserve it.

On the other hand, we poach the onion, the eggplant and the pepper in a frying pan, all finely chopped. Before they start to brown, add the minced meat and let it cook.

We cover the base of a dish suitable for the oven with a layer of mashed potatoes, place a layer with the meat on top, another with the tomato sauce and finish with a layer of mashed potatoes. Finally, we put the source in the oven so that it is gratin.

With what to accompany the mashed potato lasagna

The ideal is to serve this recipe for mashed potato lasagna fresh from the oven, so you will enjoy a soft interior and a crispy outer layer, but you can also prepare it in advance and heat it just before bringing it to the table. Serve it with a green salad, to give a lighter contrast to the menu.
