Pork loin with salt, versatile
This dish can be eaten cold or hot, and can be accompanied by vegetables, fried potatoes, mashed potatoes or apples, with whatever you want, it can solve dinners, since, in a sandwich alone or with Serrano ham, cheese, omelette French, slices of natural tomato, in short, with the ingredient that you most want, it is exquisite.
Ingredients: Piece of loin about a kilo, 2 kilos of special kitchen salt (it is thicker than usual salt), aromatic herbs (oregano, thyme, etc ...) and 1 lemon.
preparation: Cover the base of a rectangular baking dish with a layer of salt and place the loin piece on top; we season it with aromatic herbs and sprinkle it with the juice of a lemon. We cover all this with the remaining salt to the point that it is completely covered (let's think that is really where the pork loin is going to be cooked), we drop a few drops of water on top and we put it in the oven at 200ºC. When the top cracks form on the salt cover, it is ready, remove it from the oven and let it cool down for about 10 minutes. We unmold (the piece of salt will open compact) and cut with a good knife or an electric one into thin slices. It only remains to serve in the source accompanying it with the chosen garnish.
