Braised pork loin with courgettes, plums and blueberries

We begin by chopping the vegetables well and sauté them over high heat adding a little salt to make them sweat. Once the bottom is poached, we continue to brown the meat over a very high heat, putting it on the vegetables and stirring. The objective is to brown the outside of the meat to obtain a caramelized surface that will add a lot of flavor to the braising. When the meat is already a nice golden color, add two tablespoons of Perrins sauce and one tablespoon of dark soy sauce, allowing them to soak in the meat well while continuing to stir. Now is the time to add the liquids to finish off this braised loin.
We add half a glass of red wine and 300 ml of broth, bringing it to a boil and letting it cook with a lid for 15 minutes. Afterwards, we turn the piece over, add the plums and the blueberry raisins and let it cook covered for another 15 minutes.
Cut into slices and arrange the seared loin headboard with zucchini, plums and blueberries in a platter, accompanied by a garnish of fried broad beans, sautéed peas or, for example, mushrooms.
