Baked macaroni with mayonnaise, a simple recipe to surprise


The truth is that I had never tried the typical baked mayonnaise napado and when I came across this classic recipe from Doña Simone, I had no time to try it. Baked macaroni and mayonnaise are a sure hit that we have loved at home.

Of course using homemade mayonnaise, which is what I did, the dish wins a lot of points, but in your case you can choose the format that best suits your taste. To complete the dish I advise you to add some protein to the macaroni, such as ham, chicken or turkey, so that it is not monotonous.


For 2 persons
  • Macaroni 150 g
  • Parmesan 30 g
  • Olive oil (or olive and vegetable mixture) 250
  • Egg
  • Lemon juice or vinegar 5 ml
  • Salt

How to make baked macaroni and mayonnaise

We heat the oven to 200ºC with grill heat. Cook the macaroni in boiling salted water, leaving them al dente. We drain and reserve while we make the mayonnaise. In the blender glass, add the egg, a pinch of salt, the oil and a few drops of vinegar.

We put the grinding arm to the bottom and activate the mixer without moving it until we see that the sauce has bound. Then we move the arm of the blender up and down gently until we have a homogeneous texture.

We mix the macaroni with the cheese and place them in a baking dish. We cover with mayonnaise to our liking and gratin until it is slightly golden. We carefully drain the excess oil if there is it and serve immediately.

With what to accompany the baked macaroni with mayonnaise

These baked macaroni and mayonnaise are to be eaten once a year or less. As you can see, it is a caloric dish, so be careful with the portions. It should be taken fresh, just when we take it out of the oven.
