Orange blossom and olive oil madeleines recipe

Today it is easy to find a mold of madeleines in our country, but the one I have brings back good memories of my first trip to Paris, where I could not resist filling my suitcase with various culinary purchases. Normally I make them with butter, but recently I tried to make orange blossom and olive oil madeleines and the truth is that the result is just as good.

The aroma of orange blossom is usually limited to the roscón de reyes at Christmas but it is worth using it all year round in other sweet recipes, especially if we combine it with citrus aromas such as orange or lemon. I think it gives the dough a delicious aromatic fresh touch, the kind that makes your mouth water while still in the oven.

Ingredients

For 20 units
  • Sugar 75 g
  • 1/2 teaspoon orange zest
  • Egg L 2
  • Orange blossom water 2 ml
  • Pastry flour 110 g
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Extra virgin olive oil 80 ml

How to make orange blossom and olive oil madeleines

Arrange the orange zest with the sugar in a bowl and rub well until all the aroma is released. Add the eggs and the aroma of orange blossom and beat with a whisk for about three minutes. Add the sifted flour with the yeast and salt, mix and add the olive oil.

Work the dough gently until it has a homogeneous consistency without lumps, cover with plastic wrap and leave in the fridge for at least half an hour. Meanwhile, preheat the oven to 200ºC. Grease a madeleine mold and spread the dough without completely filling the gaps.

Bake for about 8-10 minutes, until golden brown to taste. Wait a bit out of the oven, remove carefully from the mold and let cool completely on a rack before serving or store in an airtight container.

The madeleines of orange blossom and olive oil are a delicious snack that we can enjoy for breakfast, after dinner or at snack time. I like to prepare them when I have guests at home for coffee or tea, they are irresistible.
