We start by peeling the apples, we cut them into quarters, we core them and we cut them into small cubes. We squeeze the lemon, filter the juice and sprinkle the fruit with it so that it does not darken. We peel the onion and chop it.
Heat four tablespoons of oil in a non-stick frying pan and sauté the onion for a few minutes until transparent. Add the apple and flavor with the curry and a pinch of freshly ground pepper. Sauté for two minutes without stopping to stir.
Arrange the cornstarch in a bowl, add the cold cream and stir until it is diluted. Add the mixture to the pan and cook over low heat for about 10 minutes, stirring from time to time so that it does not stick.
