If you want to enjoy a special breakfast tomorrow, I recommend this recipe for coffee with milk muffins. You will be surprised at how fluffy this dough is and, in addition, it is ideal to drink with the first coffee of the day.
Cupcakes that you do not eat, keep them in an airtight box, so they do not harden, or freeze them for use on any other occasion, in a special freezer bag, so they will not fill with frost from the freezer.

We start by heating the milk and dissolving the soluble coffee in it, beating a little so that there are no lumps. We reserve. We beat the eggs with the sugar until obtaining a creamy and whitish mixture, with enough volume.
We add the milk with coffee and the oil, little by little, stirring gently until they are integrated. We sift the flour and yeast into a bowl and add them to the dough, mixing well.
With a pastry bag we fill up to a little more than half of each paper capsule. Sprinkle the surface of each cupcake with a little sugar and cook in a preheated oven at 200ºC for 10 or 15 minutes.
