Watermelon jam with mint. Recipe
Nuri had some very beautiful watermelons without seeds placed in the door of his greengrocer, and when he offered me a piece to taste how sweet it was, he already convinced me to buy it. But it was so big that after eating a couple of slices I was really sorry that it spoiled in the fridge, so I decided to do something different with it and after looking for some exotic recipe, I found this mint watermelon jam.
Although it is a sweet jam, it is also spicy thanks to ginger and pepper, it is a different flavor, worthy of any palate that likes to be surprised, it is ideal to invent a thousand different pairings.
1 small seedless watermelon watermelon, 1/3 cup vinegar, 2 tablespoons lemon juice, 2 tablespoons lemon zest, 1 tablespoon 1 very finely peeled and rolled ginger, 150 grams sugar, 1/2 teaspoon pepper black, 50 grams of fresh mint.

We remove the rind from the watermelon and chop it.
In a crusher we put the sugar, the lemon zest, the mint, the vinegar and the lemon juice. We crush everything to form a homogeneous paste. We reserve
In a saucepan, bring the chopped watermelon to a boil until it is halved, stirring occasionally. Next we add the pasta that we had reserved and the ginger. We bring it to a boil.
Let it boil over high heat, stirring occasionally, until it is halved again or we consider that it has the desired texture.

If we see that almost at the end of cooking the watermelon is still very whole we can remove it for a moment from the fire and crush it with the electric arm.
