Tomato and basil jam. Recipe

For some time now, I have been buying small jars of gourmet jams of different flavors because I love spreading bread on them. Then, I put some slice of cold cuts or Serrano ham, and it is a very rich sweet-salty appetizer.

As these commercial jars are excessively priced for the quantity they offer, this summer, which I have had tomato overproduction in my garden, I have decided to prepare myself this tomato and basil jam that I like so much, and although it is not right to say it, I think It has far exceeded in flavor and texture the one I bought, so for the moment and for a long time, I keep the landlady.

  • Ripe tomato 1.6 kg
  • Sugar 800 g
  • Fresh basil leaves 15
  • Salt to taste
  • Agar agar 5 g

How to make tomato and basil jam

We will start by peeling the tomatoes and mincing them into small cubes. We add them to a pot, and add 750 g of sugar, reserving the remaining 50 g in a small bowl to mix with the agar agar powder. Add to the tomato and sugar mixture the basil leaves cut in chiffonade or very small, as well as the pinch of salt.

We cook everything together and we control the temperature with a kitchen thermometer until the mixture reaches 104 degrees Celsius. If you do not have a thermometer it will be cooking for about half an hour, and you must test if your jam is made with any of the techniques that we have already explained to you

When the jam is cooked or has reached this temperature, add the sugar mixed with the agar agar and let it boil again for a minute. We fill sterilized glass jars with the hot jam, turn them upside down and let them cool down.

If you make a lot of it, you must re-sterilize it for 20 minutes in boiling water, in a pot with water up to half the height of the jars, for the jam to be properly preserved.
