At home we like homemade jam. Now that we are in season, I advise you to prepare this quick strawberry jam like the one I have cooked to have the rest of the year.

The name of fast I have given it because thanks to its preparation, it takes a very short time to get a full-bodied strawberry jam. This fruit does not have too much pectin so it tends to give thin and quite liquid jams unless it is heavily loaded with sugar and cooks for a long time. In this way we will achieve a jam with much less sugar and with body so that it does not drain on our toast and also, as it does not take too much cooking, with an intense fruit flavor.

We will start by washing and peeling the strawberries. We chop them into small pieces or we crush them according to our taste and place them in a pot with 225 g of sugar and the lemon juice. We cook the preparation, stirring from time to time. We cook this mixture for ten or fifteen minutes over medium heat.

On the other hand, we mixed the agar agar with the rest of the sugar that we had left. We add the agar agar with the sugar in the form of rain to the jam and stir. Let it cook for five more minutes over a stronger heat, stirring or, if we have a kitchen thermometer, until it reaches 105 degrees. We remove and blunt in airtight jars.
