To start we are going to clean the chicken breasts well to cut them in two lengthwise. We flatten them slightly and season with salt and pepper. Beat the egg, place the breadcrumbs on a plate. We pass the each piece of chicken through the egg and the breadcrumbs. We repeat these two steps again. We place the milanesas in a pan with very hot oil. We leave about four to five minutes on both sides.
Meanwhile we will prepare the pico de gallo sauce and for this we will chop the tomato to which we will have previously removed the seeds. We also chop the onion, the jalapeño pepper and the coriander. We mix the four ingredients in a bowl to which we add the lemon juice and salt. We place a generous amount of pico de gallo on each milanesa at the time of serving.
